Granny Loaf

This boiled fruit cake is very quick and easy to make and is really only a modern development of the Cloutie Dumpling. A large breakfast cup should be used (approx. 10 fl oz or 300 ml).

1 cup water
1 cup sugar
3 oz margarine (75 g)
1 tsp mixed spice
12 oz mixed fruit (350 g)
1 tsp bicarbonate of soda
2 eggs
1 cup self-raising flour
1 cup plain flour

Preheat the oven to 350°F/180°C or gas mark 4.Put the water, sugar, margarine, mixed spice and fruit into a pan and bring to the boil. Simmer for a few minutes and then leave to cool. When quite cold, add the soda, eggs, and sifted flours. Turn into a greased loaf tin with a base 8 and a half "x4 and a quarter " (21 cm x 11 cm). Bake in a moderate oven for 1 and a quarter hours.
