Cooking, Oatcakes Thin
Mix
one cup of oatmeal, a pinch of bicarbonate of soda,
and a quarter teaspoonful of salt. Rub in a teaspoon of melted
fat. Add enough hot water to make a stiff dough. Roll out as
thin as possible, working quickly and dusting frequently with
dry oatmeal. Bake one side on the
traditional girdle (or on the plate of an electric cooker!)
till the edges begin to curl, toast the other side in front
of the lire or under a hot grill.
