Cheese Scones

oz. (200 g.) self-raising flour.
1 1/2 oz. (40 g.) butter.
4 oz. (100g.) grated cheese.
1 teaspoon (5 ml.) baking powder.
1 teaspoon (5 ml.) mustard.
Pinch of salt.
1/2 pint (250 ml.) milk.
Method
Sift the flour, baking powder and salt together. Rub in the
butter until the mixture looks like breadcrumbs. Stir in half
the cheese and the mustard. Add enough milk to give a fairly
soft dough. Roll out on a floured board to a thickness of 3/4
inch ( 2 cm. ) and cut into 24nch ( 5 cm. ) rounds. Sprinkle
with the rest of the cheese. Bake in a hot oven ( 425°F,
218°C, gas mark 7 ) for 10 minutes. Serve split and buttered.
